Ariel's Homemade Dijon Shallot Vinaigrette Recipe

One of my favorite clients asked me to share my recipe for the Dijon Shallot Vinaigrette that I'd featured in yesterday's post.

The junk that one buys in the store is full of chemicals, sugar, preservatives and other associated nastiness, so I'm happy to share my healthier, tastier option with you.

I make this entire recipe by "eyeing" it.  Here's my best approximation of the amounts I use:


Ariel's Homemade Dijon Shallot Vinaigrette Recipe

Ingredients
2 tablespoons of honey
1.5 tablespoon of Dijon mustard (not dry mustard)
1.5 tablespoon of fresh finely minced shallot
1/3 cup red wine vinegar
1/2 cup canola oil
1/2 teaspoon of fresh ground black pepper (or to taste)
1/2 teaspoon of  finely granulated sea salt (or to taste)

Directions
 
Step 1: Add the preceding ingredients in any order to your preferred vessel (I suggest a glass salad dressing bottle with a pour opening of at least 1/2" to let the shallot pieces flow freely).

Step 2: Shake vigorously.

Step 3: Dress you salad and enjoy.

I used this recipe on my 4th of July salad which consisted of field greens, goat cheese, blackberries and caramelized onions.  I also love to use it on a fabulous spinach, apple, bacon and basque cheese salad that I make.  Of course it's also perfectly suited for a plain dinner salad, pasta salad, or even a fresh marinated cucumber salad (though, I'd recommend leaving the Dijon mustard out for this purpose).
